What is Hericium?

Hericium Erinaceus is known as an edible and vital mushroom that grows only on very old trees. Hericium is Latin and means something like "hedgehog". It belongs to the mushroom genus of spiny beards - hence its German name Hedgehog spiny beard. The vital mushroom forms coral-like fruiting bodies which look like white, fanciful balls of wool hanging on the trees. That is why it is also called Lionsmane (USA), Monkey Head Mushroom (China) or Pom Pom Blanc (France), among others.

In Japan, its popularity is even higher. There it is called Yamabushi-take, in German: 'Bergprediger-Pilz', and is as highly valued as an edible mushroom as the popular Shiitake. In China, it has been used as an edible mushroom for centuries, but it is only in the last few decades that cultivation of the mushrooms has become possible.
